Keeping on the theme of tomato+broccoli+avocado=delicious starve cancer combination I decided to throw them together in a salad et voila a quick tasty dish I’ll be sure to make again and again. I did let the salad sit for an hour in the fridge while we went out on a walk through the forest. The lemon juice kept it from going brown and the flavours had a chance to mingle. Was a great companion to a cup of miso soup.
Broccoli Avo Crunch Salad
1 head of broccoli chopped into florets
1/2 cucumber chopped (peel if not organic)
1 tomato chopped
1 stalk of celery sliced thinly
1/2 cup of flat leaf parsley roughly chopped
1/4 cup sunflower seeds
1 avocado mashed
1 tsp sea salt
1 TBS lemon juice
2 cloves of garlic minced
Place all ingredients (except sunflower seeds) for the salad in a bowl and mix with hands to combine.
For the dressing mash all ingredients together until it creates a paste. Add to the salad and mix together gently until dressing had been distributed throughout. Sprinkle with sunflower seeds.
Serve with miso soup.
I did add a bit of spirolized beets on top for colour that I had marinated for a few days in a garlic scape pesto – recipe to come.
The sun, with all those planets revolving around it and dependent on it, can still ripen a bunch of grapes as if it had nothing else in the universe to do. ~Galileo
