We were born to make manifest the glory of God that is within us. It’s not just in some of us; it’s in everyone. And as we let our own light shine, we unconsciously give other people permission to do the same. As we are liberated from our own fear, our presence automatically liberates others
Good Morning Sunshine! My challenge to you today is to let your light shine. Write this quote somewhere and read it and think about it often.
Now as promised here is one of my favourite holiday treats adapted from Whole Foods Market’s Cocoa Oat Truffle recipe.
Cocoa Quinoa Mint Delight
Makes about 20 squares
1 cup quinoa fakes
1 cup chopped pitted dates (soak in small amount of hot water for 5 minutes to soften)
1/4 cup unsweetened cocoa powder
1/2 cup almond butter
2 teaspoons pure vanilla extract
1/2 tsp ground nutmeg
1 tsp ground cinnamon
Place quinoa flakes in a food processor and process until finely ground. Add remaining ingredients and process until finely ground and sticking together – add water if not sticky enough. Put mixture in a 8×8 pan and press until even.
1 cup cashews (soaked for 4 hours or pour hot water over and soak for 10 min)
1/4 cup fresh mint leaves
1/2 cup goji berries
Place chashews, dates, and mint in bender and blend until soft – add a little water at a time to help it blend. Once smooth and the consistency of icing add in goji berries and blend until the icing becomes speckled with little red dots.
Ice cocoa mixture and place in the freezer until ready to serve. Delicious!
